Hospitality Spotlight: Ruben Ruelas – Executive Chef at Hilton Cancun

With more than two decades of culinary experience and a lifelong passion for hospitality, RubenRuelas serves as Executive Chef at Hilton Cancun, an All-Inclusive Resort (Hilton Cancun).

In his role, Chef Ruben oversees the property’s entire food and beverage program, leading not only the kitchen and dining operations across the resort’s signature restaurants but also shaping the culinary vision for Hilton’s All-Inclusive portfolio throughout the region. Known for his dynamic leadership style, creative culinary storytelling, and commitment to authentic Mexican cuisine, Chef Ruben plays a critical role in setting Hilton Cancun apart as a flagship for elevated culinary experiences in the Caribbean. 

Chef Ruben’s career began as a buffet runner, where he quickly developed an interest in the culinary arts. Originally on a path to study medicine, he followed his passion and earned a degree from the prestigious Le Cordon Bleu in Atlanta. His training, paired with an intuitive understanding of hospitality, allowed him to rise quickly—from specialty chef to Executive Chef, with global experience that continues to shape his approach today. 

He first joined Hilton Cancun in 2009 as a specialty chef. After gaining experience and traveling internationally, he returned in a leadership capacity to spearhead the resort’s 12 gastronomic experiences including five specialty restaurants and creating their culinary identity. Under his direction, Hilton Cancun’s signature Italian restaurant La Luce has been recognized as one of the Top 100 Restaurants in the World by the Luxury Lifestyle Awards known for immersive, culturally rich dining concepts that fuse modern techniques with local heritage. Chef Ruben works closely with Hilton’s leadership to develop seasonal programming, including culinary storytelling activations like Avocado Week and Día de los Muertos.  

Chef Ruben’s approach is deeply rooted in place—often incorporating Mayan legends, traditional Mexican ingredients, and regional culinary rituals into the dining experience. Guests can expect thoughtful, elevated touches across every outlet, from the authentic flavors of Maxal, the resort’s upscale Mexican restaurant, to the custom-crafted menus found poolside and in-room dining. At Maxal, dishes are inspired by local culinary heritage and feature ingredients such as native peppers, and regional spices, with proteins like lamb and beef imported to ensure the highest quality. The resort also prides itself on its in-house bakery, offering fresh pastries, breads, and desserts daily. 

Chef Ruben is passionate about community, ensuring that every culinary touchpoint at Hilton Cancun reflects the resort’s identity as a luxury destination rooted in authenticity, innovation, and guest connection. 

What first interested you in your area of the hospitality industry?  

My career began as a buffet runner, where I quickly developed an interest in the culinary arts. I followed my passion and graduated with a degree from Le Cordon Bleu in Atlanta.  

Who are a few of the people who have encouraged your career? 

My Grandmother has been the most important influence in my career. She taught me about the value of tradition, discipline, and cooking with passion.

What challenges do you think people face in your industry?
 

Hospitality is a very demanding industry that requires passion, resilience, and consistency. One of the biggest challenges is maintaining high standards, guest expectations, and new culinary trends.

Can you cite a few accomplishments that have given you great pride and elevated your work? 

Under my direction, Hilton Cancun’s signature restaurant, La Luce, has been recognized as one of the Top 100 Restaurants in the World by Luxury Lifestyle Awards. 

What piece of advice can you lend to others who are considering a career such as yours? 

My biggest piece of advice would be to stay patient, humble, and never stop learning. Success in hospitality does not happen overnight, but rather is built over time. 

Everyone who works in hospitality has a story to tell about something incredible that happened on the job. What’s one that you often tell? 

I often share a story about a guest who visited Hilton Cancun while celebrating a family reunion. They later told me that the meal reminded them of home and brought back memories of cooking with their family. 

What do you hope people understand about those who work in your area of hospitality?  

I hope people understand that hospitality professionals dedicate themselves to creating experiences that make others feel special, welcomed, and cared for.
