7 Tips for Decanting and Serving High-Tannin, Cellar-Aged Wine

1. Setting the Bottle Upright for Sediment Control

Before you even think about opening a bottle that has aged for a long time, you must let it stand upright for at least a full day. Over the years, small particles called sediment settle at the bottom of the bottle, and any sudden movement will stir them up and cloud the liquid. Placing the bottle vertically gives these particles enough time to sink to the very bottom, creating a clear layer that is much easier to manage.

2. Choosing the Correct Decanting Vessel

The container you choose for decanting plays a major role in how the wine breathes and evolves before it reaches your mouth. For older, high-tannin wines, you should select a clean glass decanter that has a relatively narrow neck to limit the surface area exposed to air. Older wines are delicate and can lose their charm if they are blasted with too much oxygen all at once, so you want a gentle transition.

3. Mastering the Art of the Slow Pour

You must move slowly and deliberately, keeping the bottle at a steady angle to prevent the sediment at the bottom from rushing towards the opening. Use a light source, like a torch or a candle, placed behind the neck of the bottle so you can see the liquid clearly as it passes through. If you spot the cloudier sediment nearing the neck, stop pouring immediately and leave that last small bit of liquid in the bottle.

Once the wine is safely in the decanter, it needs a moment to wake up and release the complex aromas trapped inside. You do not need to swirl it aggressively, as older, tannin-heavy wines are fragile and benefit more from a calm, steady exposure to the room air. However, if your room is warm, place the decanter in a cool spot for a few minutes before serving to bring it to that ideal range.

The shape of your wine glass acts as a funnel for the bouquet, concentrating the scents that have been developing in the bottle for years. Choose a large-bowled glass that allows you to swirl the wine gently, which helps to aerate the drink further as you enjoy it. A wide opening is less important than a bowl that tapers inward, as this design traps the delicate notes of earth and dried fruit for your nose to appreciate.

7. Serving with Thoughtful Food Pairings

Rich, savoury dishes work best because the fats in the food help to coat your palate and soften the drying sensation of the tannins. Consider serving your wine alongside roasted meats, aged cheeses, or hearty stews, as these combinations create a perfect balance between the drink and the meal.
